Berkswell cheese, winner of several awards, is aged for at least 4 months to perfect its sweet, nutty flavor with a hint of caramel and a tangy finish. Similar to a Pecorino, Berkswell cheese is unique in that its ridged and patterned rind is the result of being drained in kitchen colanders. Crafted since 1989 at 16th-century Ram Hall in Heart of England, this cheese is made from the milk of the Fletcher family's East Friesland ewes, of which the patriarch, Stephen, takes great care to ensure a continual milk production.
