Made with unpasteurised milk this Camembert is matured for slightly longer to allow it to develop rich flavours and a creamy texture. With age, it becomes earthy, with notes of Brassicaceae and a creamy inner to the cheese. This unique Camembert is made using a specially developed formula that that sees the curds painstakingly hand ladled every fifteen minutes and allows an extended maturing period of at least one month to allow the optimum flavour to develop.
